Description

Rice maltodextrin is composed of maltotetraose , other oligosaccharides and a little non-reducing monosaccharides.

The viscosity of rice maltodextrin decreases as the temperature rises under certain concentration, at a greater exent than that of potato or corn maltodextrin. There is a striking viscosity climb when the concentration changes from 30% to 40%, which has not been observed from potato or corn maltodextrin.

The hygroscopicity of rice maltodextrin increases together with humidity, and the hygroscopicity of rice maltodextrin is greater than that of potato maltodextrin and corn maltodextrin. The sweetness is gradually increasing, while the thickening effect and viscosity are gradually decreasing with the rise of DE value.
