Glucose Oxidase enzyme

Introduction

Glucose oxidase derived from the fermentation and refinement of fungi strains, which used in flours and baking industry. It catalyses the oxidation of glucose to hydrogen peroxide and D-glucono-δ-lactone .

Appearance :Yellowish Powder

Odor: normal fermentation odor

Enzymatic activity: ≥500u/g

PH: pH3.5~7.5, Optimum at 5.5

Activity Temperature: 25-55°C, favorable at 37°C

Application

1.Baking industry

Glucose oxidase is used in the baking industry because its oxidizing effects result in stronger dough, thus improving bread volume and crumb structure. It also improves stability of dough and quality of bread.

2.Noodles

Anti-browning, prevent deterioration of noodles.

Reference Dosage

1.For baking: 5ppm-15ppm (0.5g-1.5g/100kg flour)

2.For noodles: 3ppm-10ppm (0.3g-.1g/100kg flour)

The optimum dosage depends on the actual quality of flour.

Assay Principle

Glucose Oxidase catalyses the following reaction:

The formation of quinoeimine dye can be measured spectrophotometrically at 500nm

Unit Definition

One unit of activity is efined as the amount of enzyme that will catalyse the oxidation of 1.0

micromole of glucose per minute at 25°C under the standard assay method conditions.

1kg aluminium foil bag, 25kg drum. Or as per client's request.

Storage and Shelf Life

Store it in a dry and cool place. Keep away from direct sunlight. Enzyme activity will be maintained at least 12 months if stored properly.

Safety
Enzyme preparations belong to protein, which may induce sensitization and cause allergic type reactions in sensitized individuals. Prolonged contact may cause minor irritation for skin, eyes or mucous membrane of nose ,so any direct contiguity with human body should be avoided .if irritation or allergic response for skin or eyes develops, consult a doctor.
